Lemon chicken stir-fry

Enjoy this healthy and yummy plate of chicken and noodles today! It only takes 30 minutes of your time.

Ingredients
- 2 teaspoon honey
- 2 lemons, juiced
- 150ml chicken stock
- 2 tablespoon soy sauce
- 4 chicken breasts, cut into chunks
- 1 tablespoon corn flour
- 1 teaspoon vegetable oil
- 2 finely sliced carrots
- 1 red pepper cut into chunks
- 140g sugar snap peas
Instructions
- Mix honey, lemon, stock and soy in a jug and set aside.
- Toss the chicken in the corn-flour ensuring it's completely coated.
- Heat the oil in a non-stick frying pan, and fry the chicken until it is golden brown and crispy around the edges.
- Add the carrots, red pepper, and fry for 1 minute more.
- Pour chicken stock into the pan, simmer, then add the sugar snap peas and bubble everything together for 5-10 minutes until the chicken is cooked and the vegetable are tender.
- Serve with noodles.
