Apple Oat Porridge with Raisins

Quick tasty porridge for raisin lovers in 15 minutes

Ingredients

  • 85g porridge oats
  • ½ teaspoon ground cinnamon
  • 250ml fortified soya milk, plus 4 tablespoons to serve
  • 2 small apples
  • 15g raisins
  • 7-8 walnut halves or 15g broken walnuts

Instructions

  • Put oats and cinnamon into a non-stick pan with 150ml water and 250ml soya milk and cook over a gentle heat. Stir frequently and simmer and leave for 5 minutes until the porridge has thickened
  • In a bowl, coarsely grate the apples, including the skin, leaving out the cores
  • Serve the porridge with the apple, raisins and nuts on top, and sprinkle over some extra cinnamon, if you like. Stir through the extra soya milk to loosen
