Tofu and vegetable scramble

Easy plant-based single dish :D

Ingredients:
  • 200 g tofu
  • Cheddar cheese
  • 1 cup tomato sauce
  • 1 cup canned chickpeas, rinsed
  • 1 cup chopped vegetables: mushrooms, onions, zucchini
  • Oil
  • Salt, pepper, spices you like

Instructions:

Heat oil in a non-stick pan over medium-heat. Add tofu, vegatbles, salt and pepper and cook until the vegatbles are softened, for about 5-7 minutes.

Add chickpeas and tomato sauce and heat through 1 to 2 minutes.

Remove the pan from the heat, gather the scramble into one section of the pan, top your dish with cheddar cheese and let melt off the heat.
